Whether you are foraging for flavour or exploring the healing traditions of herbalism, each session brings you closer to a knowledge that feels both ancient and urgently relevant. A comprehensive field handbook accompanies the course, giving you a trusted reference long after the final session. No prior knowledge required — only curiosity, good walking shoes, and a willingness to taste. This is more than a course; it is the beginning of a lifelong relationship with the wild.

What will you learn during this course?

Learn how to safely identify Wild edible and medicinal plants.

Learn the principles of ethical foraging and how to harvest safely and respectfully from nature. We explore the history of foraging, plant families, and the active compounds that give plants their healing and nutritional properties.

Learn ancient old and modern recipes with wild plants.

During each course day, we will cook together, enjoy homemade wild food, or explore seasonal tastings inspired by nature. You will learn how to easily create your own meals from wild ingredients, as well as how to harvest, dry, and preserve herbs for use throughout the year.

Meet likeminded people and discover a new world together.

During our courses, participants often form lifelong friendships. Over the past 10 years at Forest To Plate, every group has continued to stay connected long after the training ended, creating a warm and inspiring community of wild food and herbal medicine enthusiasts.

At Forest To Plate, we are grateful that our paths have crossed. For more than a decade, we have been sharing knowledge about wild plants, herbs, mushrooms, and natural living with thousands of people, guiding them step by step back to a deeper connection with nature.

We organize a wide variety of courses, workshops, and adventures focused on herbalism, wild food, mushrooms, and culinary experiences. From foraging trips in the Alps to canoe and wild food journeys in Sweden, we invite you to explore nature in immersive and unforgettable ways.

We are a passionate team of wild food enthusiasts whose mission is to help you rediscover the beauty that surrounds us and reconnect with skills and traditions that were once part of everyday life.

Where does the course take place?

The course will take place in and around Brussels. As we have carefully designed this course for english natives and expat community, we always make sure our locations are easily accessible by public transport. Once the course begins, we create a WhatsApp group so participants can connect and travel together.

Locations include the Sonian Forest, Meise, and Dilbeek.
